Method
- Whisk flour, eggs, milk and salt smooth; rest 30 minutes.
- Heat oven to 220°C fan.
- Divide oil between 12 muffin wells and heat 10 minutes.
- Pour batter into sizzling oil, filling wells about halfway.
- Bake 20–25 minutes without opening oven until well risen and deep golden.
